YUMMY PARTY FOOD
Dinner rolls*
24+ slices Black Forest Ham (I used Castlewood brand from Sam's, deli ham would be great too)
24 slices Swiss Cheese (I used the pre-sliced Tillamook, and cut the slices into smaller squares, then also used the edge pieces, 2 edge slices per sandwich)
Slice rolls, if needed. Squeeze 24 rolls on an 11x15 inch sheet pan (it's okay if they are touching). Place one slice of ham (some of my slices were super thin, so I added another half slice with those) and one slice of cheese on the bottom half of each roll, then replace tops.
*Most recipes I found called for King's Hawaiian Rolls. I am not a fan of their texture and sweetness, so I opted to go for the dinner rolls from Sam's Club. They were perfectly chewy (not spongey) and perfectly sweet with the following sauce.
Sauce of yumminess:
1 cube butter, melted
1/4 cup brown sugar
2 Tbs. Dijon mustard
1 Tbs. Worcestershire sauce
1 Tbs. poppy seeds (I used slightly less - they are mostly for aesthetics, I think)
1 tsp. onion powder
Mix together with a small whisk. Brush tops of ham and cheese rolls liberally with sauce, then pour remaining sauce over all. Cover pan with foil and refrigerate for 4 to 24 hours. Preheat oven to 350 degrees. Bake rolls, covered, for 10 minutes, then remove foil and bake another 10 to 15 minutes until the tops are golden brown.
Since I was making these for a crowd, here are the quantities I used:
3 bags of Sam's dinner rolls (I think there are 36 rolls per bag)
3 pkgs. of Castlewood thinly sliced Black Forest Ham (Sam's)
1-1/2 pkgs. of Tillamook pre-sliced Swiss cheese (Sam's)
That made 4 sheet pans of rolls (96 total), with a few plain rolls left over, which was perfect for guests who may not want/like ham and cheese (only my cute 4 yr. old neighbor friend preferred a pb&j).

PEANUT BUTTER CHOCOLATE HEAVEN
An oreo crust, a creamy peanut butter cheesecake center with peanut butter cups, and a chocolate pudding whipped topping. And no baking required! Can you see why this is heaven?

Peanut Butter Chocolate Heaven

INGREDIENTS
- 20 oreo cookies, divided
- 2 tablespoons butter, melted
- 1 package (8 ounces) cream cheese, softened
- ½ cup peanut butter
- 1-1/2 cups powdered sugar, divided
- 1 carton (16 ounces) frozen whipped topping, thawed, divided
- 15 miniature peanut butter cups, chopped
- 1 cup cold milk
- 1 package (3.9 ounces) instant chocolate fudge pudding mix
INSTRUCTIONS
- Crush 16 oreo cookies until coarse. Add the melted butter and press into the bottom of a 9x9 inch pan.
- In a large bowl, beat the cream cheese, peanut butter and 1 cup powdered sugar until smooth. Fold in half of the whipped topping and spread over the oreo crust layer. Sprinkle with the chopped peanut butter cups but reserving some to sprinkle on the top.
- In another bowl, beat the milk, pudding mix, and remaining ½ cup powdered sugar on low for about 2 minutes. Let stand for two minutes. Fold in the remaining whipped topping. Spread on top of the peanut butter cups. Sprinkle the top with remaining crushed oreos and peanut butter cups. Cover and chill for 3 hours before serving.

Sweet and Spicy Stir-Fry Chicken
Ingredients

chipotle grilled peppers and onions
Ingredients (serves 4)
- 1 1/2 Tablespoons olive oil
- 2 large green pepper, stemmed, cored, and sliced
- 2 medium red onions, sliced
- 1/2 Tablespoons fresh oregano, finely chopped (1/2 teaspoons dried oregano works too.)
- 1/2 teaspoon salt
Instructions
Over medium-high heat, add the oil, peppers, onions, oregano, and salt to a large skillet and stir to combine, until the vegetables are even coated with oil and oregano.
Cook until charred and slightly softened but still tender-crisp, about 7 minutes.
Remove from heat and serve.

CRUST LESS PIZZA
NO DOUGH PIZZA!!!!!!! This one is a WINNER!!!! Gluten Free, Low Carb, Diabetic Friendly!!!!!! For when you absolutely want pizza but not all the carbs!!!!!!!

| 1 | (8 oz) package of full fat cream cheese, room temperature |
| 2 | eggs |
| ¼ | tsp ground black pepper |
| 1 | tsp garlic powder |
| ¼ | cup grated parmesan cheese |
| Topping | |
| ½ | cup pizza sauce |
| 1½ | cups shredded mozzarella cheese |
| toppings - pepperoni, ham, sausage, mushrooms, peppers | |
| Garlic powder |
Directions
Preheat oven to 350.
Lightly spay a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.
Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 8-10 minutes, until cheese is melted.
PEPPERMINT OREO TRUFFLES
Ingredients
- 36 Oreos (NOT Doublestuff)
- 1 (8 oz) pkg cream cheese, softened
- 1 tsp peppermint extract
- 16 oz. vanilla almond bark or candy melts
- 1/4 cup crushed candy canes or peppermint candies, for decorating
Directions
- Set a long sheet of wax paper over a cookie sheet, set aside. Place 36 Oreos in a food processor and pulse until finely crushed (alternately if you don't own a food processor you can place Oreos in a large Ziploc bag, seal bag and crush with a rolling pin until finely crushed). Pour crushed Oreos into a mixing bowl. In separate mixing bow blend together cream cheese and peppermint extract. Add cream cheese mixture to crushed Oreos and using a the back of a spoon, stir mixture while pressing it along the bottom of the bowl, until well combine and evenly moistened. Scoop mixture out and form into 1 inch balls (if you happen to have a kitchen scale, they should be about 16 grams each) then align on prepared cookie sheet. Place truffles in freezer for 10 minutes.
- Melt almond bark according to directions on package. Remove truffles from freezer and dip in melted chocolate and evenly coat then allow excess chocolate to run off (I barely made it with 16 oz. of the melted bark but you may need a little more). Return to baking sheet, immediately sprinkle tops with crushed candy canes then allow chocolate to set. Store in an airtight container in refrigerator.

1 12.8-ounce box Rice Chex cereal
1 12-ponce box Golden Grahams cereal
1 7-ounce bag shredded coconut
1 4-ounce bag slivered almonds
1 1/2 cups butter (3…yes 3…sticks of butter)
2 cups sugar
2 cups corn syrup
Combine Rice Chex and Golden Grahams, coconut and almonds in
a large mixing bowl. Stir to combine.

234 degrees on a candy thermometer. Pour over cereal mixture and stir until all
is well coated. Pour mixture out onto 2 large cookie sheets to cool. Stir it
